Dutch Stamppot

Stamppot is a traditional wintry dish in the Netherlands that I’ve come to make my own. It’s basically mashed potatoes with winter greens steamed in. Try it your way!

Bring potatoes/cauliflower/radishes/yucca/celeriac to boil in lightly salted water.

chop up leafy green of your choice, depending on the season:

ratio of root veg:greens = 2:1

cold month greens: endive, kale, collard greens

warm month greens: arugula, mustard greens, dandelion greens

Throw the greens in to steam just when the root veggies can be pierced with a fork

Drain all the vegetables, add knob of butter and splash of milk and mash

For a topping, sauté onions in olive oil on a low heat with a cover until they caramelize. Add thinly sliced cabbage and/or mushrooms if you like.

Traditionally served with sausage or speck (meat or veggie).
